I need help with pizza crust.?
I'm very inexperienced at baking (I'm a guy), and I don't really understand how bread doughs work. I want to make a whole grain pizza crust that will have a dense consistency, rather than a fluffy "bread" type of consistency. I don't want to use any type of refined flours, or soy flours. I find that most pizza crusts in cheap pizza restaurants are "airy" probably to cut costs. The pizza crusts in chicago are more dense and more like a crust than a bread. I have no idea how to do this, but I am a good cook so I'm confident with the right information I will succeed.
